Overview

The Director of Food & Beverage leads all food and beverage operations for a mid-size casino, overseeing multiple outlets including restaurants, bars, lounges, and casino service areas. This role is responsible for driving guest satisfaction, financial performance, and operational excellence in a fast-paced, regulated environment.

Key Responsibilities

• Lead day-to-day operations for all F&B outlets across the property

• Manage P&L performance, budgets, forecasting, and cost controls

• Recruit, develop, and lead F&B leadership teams and frontline managers

• Ensure consistent service standards, food quality, and guest experience

• Partner with culinary and beverage leaders on menus, programming, and promotions

• Collaborate with marketing and casino leadership on events and revenue initiatives

• Maintain compliance with gaming regulations, alcohol laws, health codes, and labor standards

Qualifications

• 7+ years of progressive F&B leadership experience, in a hotel
  

• Proven success managing multi-outlet operations and large teams

• Strong financial acumen with hands-on P&L experience

• Experience with Rooms in a hotel

• Flexible schedule; ability to work nights, weekends, and holidays as needed
