Job Description – Pastry Apprentice
The Pastry Apprentice is responsible for the following:
Overall Execution of the Bakery items, Quality of the baked goods, Preparation & Presentation and Flavor of the Bakery Foods, and promoting a happy, healthy cohesive and Professional work environment.
The Pastry Apprentice position is eligible to enter the ACF Pastry Certification Program. This program will give the apprentice the ability to earn a certificate signifying that that he/ she is proficient in the major areas of bakery production. This online program requires a 15 month commitment.
a) Artisan Breads
b) Laminated doughs for Croissant
c) Sauces and compotes
d) Layer cakes
e) Cheesecakes and Tarts and Pies
f) Cookies and Brownies
g) Basic Sanitation
Pastry Apprentice held accountable to:
a) Daily Production List is organized, executed, and Followed through.
b) Daily Cleaning expectations and end of Shift Closeout.
Cleanliness
a) Team Members are held accountable to daily cleaning and end of shift Check out process.
b) Kitchen Closing list has been completed
c) Monthly deep cleaning has been organized, delegated, and followed through.
d) Team Members are following ServeSafe and Health Department Standards.
